He began his professional adventure in Mexico at the age of 13 in the family-owned bakery and pastry shop.
At 20 he arrives in Italy and begins to experiment with the art of sushi in a restaurant in the city of Milan. It is in that moment that he realizes that that will be his way of him.

At this point El Tacomaki becomes the natural turning point in terms of future goals: a new Japanese-Mexican cuisine format that combines the art of preparing sushi and the spicy flavors of Mexican cuisine.
